Corn and Chicken Dinner

Hi all, hope this saturday is treating you well, and that I caught you before shopping.  We are going to do a traditional chicken dinner, with a twist.  Hope you enjoy and please feel free to let me know what you think of this recipe.

3 garlic cloves, minced, divided
1/2 cup butter, divided
3 pound chicken legs and thighs (about 8 pieces)
3 ears fresh corn, husked, and cut into thirds
1/4 cup water
2 teaspoons dried tarragon, divided (oregano is an option)
1/4 pepper
2 medium zucchini sliced into 1/2 inch pieces
2 tomatoes, seeded and cut into chunks

In a large skillet or dutch oven, saute 2 garlic cloves in 2 tbsp of butter.  Add the chicken and brown on both sides.  Reduce heat.  Add corn and water.  Sprinkle with 1 tsp tarragon (oregano), and pepper.  Cover and simmer 20-25 min, until chicken is tender.

Meanwhile in a small saucepan, melt remaining butter.  Add remaining garlic and tarragon (oregano), simmer 3 min.  Layer zucchini and tomatoes over the chicken mixture.  Drizzle seasoned butter all over, cover and cook at least 3-5 min.

serves 6-8

Hope this serves as a nice family dinner, mashed or roasted potatoes is nice on the side.
